Walnut Date Yule Log recipe

Unlike the fruitcake, the Yule log is a fruit and nut-filled holiday cake made with traditional flour - the result is a rolled cake with layers of dried fruits, cream cheese frosting, and lots of holiday cheer.


3/4 cup chopped dates
¼ cup dried cranberries
3/4 cup sugar, divided
3 eggs
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon cinnamon
½ teaspoon allspice
½ teaspoon salt
3/4 cup chopped walnuts
1 (8-ounce) package cream cheese
¼ cup butter, softened
1 teaspoon vanilla
1 cup confectioners' sugar


1) Preheat oven to 375F. Lightly grease a jelly roll ran.

2) Prepare the cake: In a medium pot, combine dates, cranberries, ¼ cup sugar, and 1 cup water; bring to a boil over high heat and cook 5 minutes. Remove from heat and cool slightly. Set aside.

3) In a large bowl, beat eggs 5 minutes. Add ½ cup sugar and vanilla; beat well. Set aside.

4) In a large bowl, stir together flour, cinnamon, allspice, and salt. Fold in egg mixture; fold in date mixture. Transfer to prepared jelly roll pan and sprinkle walnuts on top. Bake 15 minutes, until a toothpick inserted in the middle comes out clean. Cool 5 minutes; turn out with a towel. Roll up and cool.

5) Prepare the filling: Beat together cream cheese, butter, and vanilla. Add sugar and beat well.

6) When cool, unroll and fill with cream cheese; reroll and slice.
